Butter Cinnamon & Sugar Loaf.
Copycat Costco’s Butter Cinnamon & Sugar Loaf. The rich buttery cinnamon & sugar topping is my favorite part! You could also take some cinnamon & sugar and swirl it in the middle of the loaf if you want to make it even sweeter. This is a dense, dessert bread that can be served at breakfast or anytime really.
Recipe makes 1 loaf. I used a Pyrex 1.5 Quart Glass Loaf pan to make this recipe.
Update: 3/29/2020: A few people have suggested doing the following to add more flavor to the batter: add a little cinnamon and an extra splash of vanilla to the batter. People have also commenting that they added salt. I used salted butter so I did not add additional salt.
- Batter:
- ½ cup salted butter, softened (add ¼ teaspoon salt if using unsalted)
- 1 cup sugar
- 1 large egg
- 1 teaspoon vanilla
- 1 cup milk
- 2 cups flour
- 1 teaspoon baking soda
- (optional add ¼ teaspoon cinnamon to batter)
- Cinnamon/Sugar Topping:
- 2 Tablespoons sugar
- 2 Tablespoons brown sugar
- 2 Tablespoons melted butter
- ½ teaspoon cinnamon
- Cream butter, sugar, vanilla, and egg together. Add milk, flour, & baking soda & mix well.
- Pour batter into a greased loaf pan.
- Bake at 350 degrees for 50-60 min. or until toothpick inserted in center comes out clean.
- Let cool in pan for about 20 minutes.
- Brush melted butter on top of loaf. In a small bowl mix the sugars & cinnamon together. Sprinkle on top of loaf. Brush remaining butter over the loaf.
- Remove from pan.

I baked this loaf today. I used brown sugar rather than white granulated sugar and I used a metal loaf pan. It is very good. I will definitely make more of these in the future. Thanks for the recipe.

I am confused about the butter. It says brush melted butter, then sprinkle sugar and then brush remaining butter over loaf.
Hi Debbie, Sorry for the confusion. I say to brush it with remaining butter again (2nd time) to give it that rich dark buttery/cinnamon look my photos have. If you only brush it once with butter then sprinkle with sugar it doesn’t get that look. So I used a silicone pastry/basting brush to coat the top of sugar with butter. You don’t have to do it that way though.
The Pros –THIS IS THEEE MOST AMAZING loaf you will ever eat! The Cons ~~ it is totally addictive! One piece isn’t nearly enough. INCREDIBLE!

Is there a difference in baking time if you double the recipe?

Hi Erika, No you can use a metal or ceramic loaf pan also.
I have to know if this tastes like the cinnamon butter bread that I have purchased from Costco….3 loaves to a pack. That receipe is totally addictive and so full of cinnamon flavor. The receipe that you have penned seems rather simple…and I am all about that….if I can get the same taste as Costco’s cinnamon bread. Please comment…but only if you have tasted Costco’s cinnamon bread. :) Thank you!
Didn’t have enough butter or cinnamon or sugar to match flavor of Costco bread. Was good though as a healthier lower cost option, or as a good start toward getting a match.
I would love to incorporate chunks of rhubarb into this loaf recipie….any advice on how to successfully make that work?
Hi Jay, I have seen several recipes available for rhubarb bread, they just call for chunks of rhubarb to be folded into the batter as the last step.
This is good for what it is, but it is not a good copy of the Costco loaves. The outside layer is close, but the inside texture and flavor is not close. It kind of tastes like banana-less bags bread.

I agree with the post it is good, but taste like banana bread minus the banana and is not really a copycat of costco. I think swirling cinnamon and sugar in the batter would be necessary. I poked holes in the cooked loaf and poured the butter over it and then put the topping on.

Can this recipe be used in a 2lb loaf pan?
Hi Valerie, I’m not familiar with bread pans being measured in pounds. I would check the measurements. If it is a 9×5″ loaf pan it will work. Thanks.

The inside is rather bland. I then realized I hadn’t added salt. Then looked back at the recipe to see if contains no salt! It really needs some and that would help the flavor tremendously.

This turned out well for me but I did take the toppings and mix it in the batter on top before I cooked it and I put the the topping on top as well.

I made this… the bread has a wonderful texture! Soft and delicious…. it is a wonderful cinnamon bread…. will make again, I think I will try to put the topping on the batter and then bake next time, to give it a caramelized crunchy cinnamon top…

recipe says to use salted butter. I don’t but butter with salt. What do I do with
Hi Pam, For every 1/2 cup (1 stick) of salted butter required, you can add ¼ teaspoon of salt to unsalted butter. Thanks!
Holly and Katie, thanks for sharing the recipe. As someone who loves the Costco version, I would say that you need to add cinnamon to the batter as well…without it, it’s not a very cinnamon-y cinnamon bread :)

I have actually worked for Costco’s bakeries during the time this item was made. The Costco version is literally their normal Butter Pound Loaf, dunked into a bowl of melted butter after baking, then rolled in the cinnamon sugar mix. So first, get a rich butter recipe and just tweak the ending.

I just found out that Costco discontinued their 3 pack cinnamon bread. I have grandkids that just loved that bread and so I started googling. I found yours, and read the comments. I have not made it yet, but agree with some that say it needs cinnamon/sugar in the middle. Maybe 1/2 buttermilk and 1/2 reg milk for a richer flavor also. Costco’s bread definitely had a sugary texture on the outside of bread and not just the top. I will make it and hope it turns out for the grandkids to enjoy.

I have been told at the store I shop in that it is seasonal. When I bought it in the past it was late fall through Christmas. I recently bought several packages right before Halloween at a St. Louis, MO location and went in last week to get more and they said they stopped making it and replaced it with other offerings. It is a favorite of my family and friends and they always ask me to pick up extra for them. I was so disappointed.
We just picked up the 3 loaves that Costco sells last week. It must be back in season. They didn’t have it throughout Nov and Dec in Pennsylvania. I think I’ll try this with adding the cinnamon and vanilla to the batter then dip the loaf in butter then the sugar mixture the way Stephanie said they actually do it at Costco. I’ll let you know how it comes out.
I have had the costco bread in the 3 packs which made me google a recipe. I found this one and I just pulled it from the oven. I will let you know how it turns out.
I have just made your recipe but having trouble getting it done in the middle. I am using 9 x 5 glass pans and baking at 350 degrees. It is very doughy in the middle as well as the top center. The toothpick appeared clean but the bread is not done. Any suggestions for me? Thanks.
Hi Judy, It sounds like it needed additional baking time. It probably needed to stay in the oven for 5-10 mins. longer. I would try checking it with a toothpick directly in the center on two different spots. I know it is hard to tell when it is full cooked in the center.
I had trouble getting the bread to rise fully. I am baking at 6,000 feet of elevation. Any tips?
Hi Elizabeth, Usually the problem with high-altitude bread baking the yeast rises too much and they tell you to decrease the yeast by 25% so I’m not sure why your bread didn’t rise. Is it cold inside? Bread takes longer to rise if the indoor temperatures are cool. Is your yeast fresh? I can only think it had something to do with the yeast or the indoor temps.
Are there any adjustments I need to make for high altitude? I live at 7200 ft.
I’ve not baked at high altitude but it is recommended that you make adjustments.
Reduce sugar: for each cup, decrease 1 to 3 tablespoons.
Increase liquid: for each cup, add 3 to 4 tablespoons.
Increase oven temperature by 25 degrees F.
Fill pans only 1/2 full of batter, not 2/3.

By not baking the sugar & cinnamon topping on the bread but putting it on after brushing bread before & after with butter, does it stick to bread and not fall off? I am baking these in mini bread pans to use as gifts.
Hi Brenda, It sticks to the bread but it may rub off more easily then if it is applied prior to baking.
It doesn’t taste exactly like the ones at Costco, but it’s still delicious. The ones from Costco are sweeter

Sara, I think you could make these in muffin form, I have done so with similar recipes. You would need to reduce the baking time though. Thanks!
The recipe is just ok for me. The batter seemed super bland. The depth of flavor wasn’t there. :( My husband loved it. The kids and I were expecting it to taste more like the Costco loaves. For us, it wasn’t a dupe. A good recipe for a basic coffee cake loaf though. Great with coffee!

Just made this. Added the cinnamon to the batter as suggested. It wasn’t bad, but definitely not a dupe for the Costco bread :/ people saying it was the texture of banana bread were accurate. And I tried to brush butter on top of the cinnamon sugar at the end but the silicone brush and butter just picked up the sugar instead.
