Oatmeal Cinnamon Raisin Cookies.
I don’t even like oatmeal raisin cookies and I thought these were great! They are soft, chewy with just the right amount of cinnamon. My husband and a few friends talked me into making them for an event and everyone loved them. My husband ate 5 of them that night and they are not small cookies! I’m more of a chocolate chip person, so I might try this and add chocolate chips instead of the raisins next time.
Don’t over mix the batter or you will have flat cookies and don’t over bake or you will have crispy, not chewy cookies. Other than that it’s a very simple recipe.
- 2 cups flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- ¼ teaspoon salt
- 1 teaspoon cinnamon
- ¼ teaspoon pumpkin pie spice
- 1 cup soft butter
- 1 cup sugar
- 1 cup dark brown sugar packed
- 2 eggs
- 2 teaspoons vanilla
- 3 cups oats- not quick oats
- 1½ cups raisins
- Topping:
- 3 tablespoons sugar
- 1 teaspoon cinnamon
- Preheat oven 350 degrees. Lightly grease cookie sheets.
- In medium bowl mix flour, baking powder, soda, salt and spices together. Set aside.
- In large bowl cream butter, sugars, eggs and vanilla together until fluffy. Slowly stir (by hand) the flour mixture into the sugar mixture, only mixing until flour is incorporated. Don't over mix. Stir in oats and raisins by hand. Scoop 2-3 tablespoons and place on greased cookie sheet. Take the 3 T sugar and 1 t of cinnamon and mix in small bowl. Sprinkle a pinch of the mixture on top of each cookies. Bake at 350 for 10-12 mins. or until the edges start to get golden. They will be chewy cookies if you don't over bake.
