Giant Easter Egg Sugar Cookies

  • -Sugar Cookies-
  • 1 cup sugar
  • ½ cup sour cream
  • 1.5 eggs (you need 1 egg, plus ½ of another, just add the 1st egg then break the 2nd egg into a small bowl, whisk it with a fork then pour in about ½, discard the rest)
  • ½ cup (1 stick) butter, softened (I used salted)
  • 1 teaspoon vanilla extract
  • 2¾ cup all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • -Frosting-
  • ½ cup (1 stick) butter, softened
  • 4¾ cups powdered sugar
  • 1 teaspoon vanilla extract
  • 4½ tablespoon milk (I used skim)
  • +sprinkles for decorating
  1. Preheat oven to 350 degrees F. Line cookie sheets with parchment paper or non-stick baking mat.
  2. In a large mixing bowl, combine sugar, sour cream, eggs, butter, & vanilla. Add flour, baking powder, & baking soda. Mix it up until a soft dough forms.
  3. Divide dough into 2-4 parts (depending on how large of eggs your making).
  4. Place dough onto prepared cookie sheet & use your hands to press the dough out into an egg shape ¼" thick.
  5. Bake for 12-15 minutes or until edges are golden brown & middle is set.
  6. Let cookies cool completely.
  7. Mix up frosting by combining all the ingredients in a mixing bowl & using an electric mixer to mix it until smooth. *(You may need to add a little more powdered sugar or milk to get the right consistency).
  8. Frost & decorate eggs as desired.
