Chocolate Fudge Cake

  • Cake:
  • 2 cups flour
  • 2 cups sugar
  • 1 teaspoon baking soda
  • ¼ teaspoon salt
  • 1 box chocolate fudge pudding 3.9 ounce (the regular size box)
  • 2 eggs
  • ½ cup buttermilk
  • 1 teaspoon vanilla
  • 1 cup butter
  • ¼ cup cocoa powder
  • 1 cup water
  • 1 cup chocolate chips (I used mini)
  • Ganache:
  • 9 ounces of chocolate chips
  • 1 cup of heavy cream
  1. Preheat oven to 350 degrees and grease a 9x13 pan.
  2. In large mixing bowl, mix flour, sugar, soda, salt, and pudding. Using a mixer on medium speed, mix in eggs, buttermilk and vanilla.
  3. In medium pan over medium high heat, heat butter, cocoa, and water until butter is melted and cocoa is dissolved. Slowly add this to the flour mixture in the large bowl. Mix on medium for 1 minute. Add in chocolate chips. Pour in 9x13 pan. Bake at 350 for 30-35 mins or until toothpick comes our clean.
  4. To make ganache, put chocolate chips in bowl. Boil the heavy cream, then pour over chocolate chips, mix until smooth. Pour over warm, not hot cake.
