Gingerbread Snickerdoodle Bars Gingerdoodles

  • Ginger Dough:
  • ½ cup soft butter
  • ½ cup sugar
  • ½ cup brown sugar
  • 1 egg
  • 1 teaspoon vanilla
  • ¼ cup molasses
  • ¾ teaspoon cinnamon
  • ¾ teaspoon ginger
  • pinch of nutmeg
  • ½ teaspoon salt
  • 2 cups flour
  • 1 teaspoon baking soda
  • Snickerdoodle Dough:
  • ½ cup soft butter
  • 1 cup sugar
  • 2 eggs
  • 1 teaspoon vanilla
  • 2¼ cups flour
  • 1 teaspoon baking soda
  • 1 teaspoon cream of tartar
  • ½ teaspoon salt
  • For sprinkling on cookies:
  • ¼ cup sugar
  • 2 teaspoons cinnamon
  • pinch of ginger
  1. Preheat oven to 350 degrees.
  2. Ginger Dough: Cream butter and sugars, then add egg, vanilla and molasses. In small bowl mix cinnamon, ginger, nutmeg, salt, flour and soda. Slowly add to butter mixture. Set aside.
  3. Snickerdoodle Dough: (in a new bowl) Cream butter and sugar together, then add eggs and vanilla. In small bowl, mix flour, soda, tartar and salt. Add to butter mixture. Set aside.
  4. In small bowl mix sugar, cinnamon and ginger together.
  5. Get out an 9x13 pan.
  6. Divide ginger dough into eight balls, do the same with the snickerdoodle dough. Take one of the ginger balls and shape into a rope, then give it a roll on the counter until it's about 9-10" long. Do the same thing with the snickerdoodle dough. Gently twist them together and place in the pan. Repeat until all the dough is gone, then pat them down just a little and sprinkle with sugar mixture.
  7. Bake for 25-30 mins or until the edges start to get golden.
