Classic French Madeleines

Ingredients
  • 2 large eggs
  • ⅓ cup sugar
  • ⅔ cup all purpose flour
  • 1 teaspoon baking powder
  • ½ up (1 stick) salted butter, melted
  • ½ teaspoon vanilla
  • 2 Tablespoons milk
  • 1 teaspoon lemon zest (optional)
Instructions
  1. Using an electric mix beat sugar & egg until light & airy (about 3 minutes).
  2. Add flour & baking powder & mix for about 30 seconds until incorporated.
  3. Mix in melted butter slowly.
  4. Add milk, vanilla, & lemon zest (optional) & mix just until combined.
  5. Cover bowl with plastic wrap & refrigerate for 1 hour.
  6. Remove from refrigerator.
  7. Grease Madeleine pan.
  8. Preheat oven to 375 F. degrees.
  9. Fill to the brim & smooth down with rubber spatula.
  10. Bake 10-12 minutes until edges are starting to turn golden brown.
