Butter Cookies

Serves: 18
  • 1 cup all purpose flour
  • ¼ teaspoon baking powder
  • 12 Tablespoons (1½ sticks) salted butter, softened
  • ½ cup sugar
  • 1 egg yolk
  • ¼ teaspoon vanilla
  1. Cream butter and sugar together using an electric mixer for about 3 minutes.
  2. Then mix in egg yolk and vanilla. Add flour and baking powder and mix well.
  3. Either roll dough into a log and cover with plastic wrap and place in refrigerator or just refrigerate in bowl for at least 1 hour.
  4. After dough has chilled remove from frig.
  5. Preheat oven to 375°F.
  6. Slice and bake cookies (1/8-1/4" thick) if you rolled into a log and place on cookie sheet or roll dough into 1½" balls.
  7. Bake for 12-15 minutes or until the edges are just starting to turn golden brown.
