I have two small box gardens and I always have too much zucchini. I give some away, grill some, and make zucchini bread, but I needed another recipe. I just started going through my pantry and adding stuff to the pot and this is what I came up with. Everyone in my family really liked it, including my picky daughter.
Creamy Zucchini Soup Recipe

Ingredients
- 2 tablespoon oil
- ½ cup chopped onion
- 1 tablespoon minced garlic
- 1 box of chicken broth 32 oz
- 1 can of white beans (rinsed)
- 1 can of diced tomatoes (rinsed)
- 1 can of diced green chiles 4 oz
- 1 can of corn (or frozen corn)
- 1 teaspoon chili powder
- ½ teaspoon cumin
- 2 small-medium Zucchini cut
- salt and pepper to taste
- 1 cup heavy cream
- 1 cup shredded sharp cheddar cheese
- ¼ cup chopped cilantro
Instructions
- heat oil in large pot
- add garlic and onion, saute until tender
- add the chicken broth, beans, tomatoes, chiles and corn
- add chili powder, cumin, salt and pepper
- bring to a boil
- add zucchini and reduce heat to low-med
- simmer for 15 min or until zucchini is tender
- add cheese, cream, and cilantro simmer and stir until combined
