Soft Chewy Brown Sugar Cookies
So my sister (Holly) made me these cookies a few days ago & I liked them so much I just made them again! When she first made them she set a plate in front of me with 4 cookies on it & I ate them all! My sister had walked away after she set the plate down so she didn’t know I ate them all in like 2 minutes flat, when I told her she just laughed. I knew I was going to be asking for the recipe from her immediately.
I think it’s been 2 days since I first tried this delicious recipe & I just had to make them again. I’m crazy over sugar cookies & these cookies tasted so good with the brown sugar in them that I loved them at first bite! They are soft, just a little bit chewy & they have a nice buttery flavor to them. This recipe is basically a chocolate chip cookie recipe without the chocolate chips, weird right? But if your craving a slightly different flavored cookie or you’ve ever wondered what a chocolate chip cookie would taste like without the chocolate chips then give this recipe a try!
It makes a big batch, about 50 cookies so if you don’t want that many you could make half a recipe.
- 1 cup soft butter
- 1 cup white sugar
- 1 cup brown sugar
- 2 eggs
- 2 teaspoons vanilla
- 3 cups all flour
- 2 teaspoons hot water
- 1 teaspoon baking soda
- ½ teaspoon salt
- Preheat oven to 350F
- Cream together butter, white sugar, and brown sugar until smooth
- Beat in the eggs one at a time
- Add vanilla
- In a small bowl, dissolve baking soda in hot water, then add to batter
- Add salt, then slowly stir in flour
- Drop by heaping teaspoon full onto ungreased cookie sheet
- Bake for 10-12 min. or until edges start to brown.
These cookies are delicious!! I made them on several occasions…not one was left. Thanks for a great go to dessert :-)

This may sound like a stupid question, would I be ok to use cookies cutters with this dough? Will the cookies stay together?
Hi Carmen, I’m not sure if this dough is thick enough to use with cookie cutters, you would probably have to add a lot more flour which might change the flavor.
Couldn’t you put it in the freezer or fridge until its thick, roll it with a pin and then cut them that way?

Hi Nicole, Thanks for commenting. Your idea could work. I’ve never tried making this recipe into a roll out cookie recipe. The dough is very sticky & not easy to work with & it spreads a lot when baking so that is why I didn’t recommend it. I worry that the cookies would spread too much in the oven & that the dough would be a sticky mess to work with even if it is chilled but it could work with flour & time in the freezer or frig just not 100% sure…I’ve had issues working with similar dough & had no success.
