Easy moist Chocolate Cupcakes. My daughter made and decorated these by herself (she’s 9) and I think they look amazing! The funny thing is I am kind of OCD in the kitchen when it comes to stuff on the blog because I want the pictures to be “perfect” and she is always saying “Mom I don’t need your help, I know what I am doing.” and she does :)
You can use any flavor frosting that you want. The one’s here are frosted with our Cream Cheese Frosting Recipe and it was delicious! My husband who is strictly a white cake with vanilla frosting guy, even thought they were great.
The one’s in the pictures were made using 12 cupcakes. If you want shorter cupcakes try making 14.
For the frosting she just stuck the frosting in a zip lock back, cut the corner off and squeezed it out in a spiral…easy!
- 1¼ cups flour
- 1 cup sugar
- ½ cup cocoa powder (dutch is preferred)
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ½ teaspoon salt
- 1 tablespoon sour cream
- ½ cup milk
- ¼ cup oil
- 1 egg
- ½ teaspoon vanilla
- ½ cup boiling water
- Cream Cheese Frosting
- Preheat oven to 325 degrees. Line muffin tin (makes 12-14).
- Combine flour, sugar, cocoa, baking powder, baking soda and salt in large bowl. Add milk, oil, egg and vanilla. Beat on medium for 1 min. Add boiling water and beat for another min or 2 until well combined. Fill 12-14 with cake batter.
- Bake for 13-16 mins or until a toothpick inserted in center comes out clean. Cool completely before frosting.
