Christmas Butter Cookies
It’s that time of year again! Time to start Holiday baking. I love to make a bunch of different kinds of Christmas cookies & give them away to friends & family. This year I’m trying to add in some new recipes & I thought I would share with you my recipe for Christmas Butter Cookies. It’s a shortbread type of cookie which means it is very buttery, melts in your mouth, & has a little crispness to it. I added a little drop of frosting to the middle & sprinkles. These cookies would also look great if you added red & green food coloring to the frosting to make them more festive.
I used a Wilton 12″ disposable decorating bag with a Wilton 2D closed star decorating tip to make the swirl cookie shape. I swirled them by making a small circle then finishing back around to the center. For the frosting in the middle I also used a Wilton decorating bag with a Wilton open 21 star tip. The icing in the middle will harden when dry.
This recipe makes about 34 cookies. The cookies will flatten out some when you bake them. If you don’t want them to flatten out you could try refrigerating the cookies on the cookie sheet for 20 minutes prior to baking.
- 1 cup (2 sticks) softened butter (I used salted)
- 1½ cups all purpose flour
- 1 teaspoon vanilla extract
- ½ cup powdered sugar
- -For the Icing-
- 1 Tablespoon butter (melted)
- ½ cup powdered sugar
- ½ Tablespoon milk
- -sprinkles (optional)
- Preheat oven to 350 F degrees.
- In a mixing bowl using an electric mixer combine the butter, flour, vanilla, & powdered sugar until well combined.
- Drop dough by the teaspoon full onto an ungreased cookie sheet or use a piping bad & a star tip like I did and swirl the cookies onto cookie sheet.
- Bake for 13-15 minutes until the edges are just starting to turn golden.
- After 5 minutes, move to cooling rack.
- Prepare icing by hand mixing the ingredients together in a small bowl. If it is not thick enough you may need to add a touch more powdered sugar, if it is too thick add a little more milk.
- Pipe icing or drop icing onto middle of cooled cookies. Add sprinkles (optional).
