Brookie Brownie Cookie Bars
I’ve bought the boxed ones at the store but this was my first time making homemade. They were really good!!! I took these to a friends house and her husband was like brookie?, and I’m like brownie + cookie= brookie :)
If you wanted to cheat you could always get a box of brownie mix, but I think it’s great all homemade.
Drop the cookie dough by the spoonful on top of the brownie mixture, then press it down lightly. I sprinkled a few more chocolate chips on top before I put it in the oven.

Ingredients
- Cookie Layer:
- ½ cup soft butter
- ½ cup brown sugar
- ¼ cup sugar
- 1 teaspoon vanilla
- 1 egg
- 1¼ cups flour
- ½ teaspoon baking soda
- ¾ cup chocolate chips
- Brownie Layer:
- 1 cup sugar
- ½ cup melted butter
- ⅓ cup cocoa powder
- 1 teaspoon vanilla
- 2 eggs
- ½ cup flour
- ¼ teaspoon baking powder
- ¼ cup chocolate chips
Instructions
- Preheat oven to 350 degrees and grease a 9x13 pan.
- In bowl cream together butter and sugars, then mix in vanilla and egg. Mix in flour and soda at the same time. Mix until combined, then add in chips. Set bowl aside.
- In another bowl mix sugar, melted butter and cocoa. Mix in vanilla and eggs. Then add in flour and baking powder at the same time. Mix until combined then add chocolate chips.
- Add brownie mixture to 9x13 pan and spread around. Then take spoonfuls of cookie dough and drop all around the brownie batter. take the back of a spoon and give the cookie dough a little press down.
- Bake for 25-30 mins or until cookie dough layer is light golden brown.
