Brown Sugar Ginger Cookies.
I wanted to make some ginger cookies and I didn’t have any molasses, so I decided to give these a try. Very easy to make! Soft and Chewy and long as you don’t over-bake them.

Ingredients
- 1 cup packed brown sugar
- ¾ cup soft butter
- 1 teaspoon vanilla
- 1 egg
- 2 cups flour
- ½ teaspoon baking soda
- ½ teaspoon ground ginger
- For rolling the cookies:
- ⅓ cup sugar
- ⅛ teaspoon ground ginger
- ⅛ teaspoon cinnamon
Instructions
- Preheat oven to 375 degrees.
- Mix brown sugar, butter, vanilla and egg together. Still in flour, baking soda and ginger.
- In small bowl mix the ⅓ cup sugar, ⅛ teaspoon of ginger and cinnamon. Roll a teaspoon of dough into a ball. Roll the ball in the sugar mixture, then place on the cookie sheet. With the bottom of a glass or your fingers, give the dough a little press down, so it's about a ½" thick.
- Bake at 375 degrees for 8-10 mins.
