Soft sugar cookie recipe made dairy free using vegetable oil and no butter. I love this recipe for soft thick sugar cookies. I have a member of my household that has a dairy allergy so I am always trying out new dairy free recipes. I have several other dairy free recipes also posted on this blog like my dairy free pancakes, dairy free bread and dairy free biscuits.
There are numerous reasons why this recipe might come in handy for you like the list I’ve created below.
1. If you find you have run out of butter.
2. Maybe you are trying to cut costs and bake with oil instead of butter
3. Perhaps for dietary reasons
4. Allergy reasons
Recipe makes about 20 large cookies or two cookie sheets worth of cookies.
- 1 cup vegetable oil
- 1 cup brown sugar
- 2 Tablespoon regular sugar
- 1 large egg
- 2 teaspoons vanilla extract
- ¼ teaspoon salt
- 2¾ cups all-purpose flour
- 1½ teaspoons baking powder
- (1/4 cup regular sugar for coating)
- Preheat oven to 350 F degrees.
- In a large mixing bowl add oil, sugars, egg, vanilla and salt and mix well.
- Add in flour and baking powder and mix well.
- Scoop by the heaping tablespoon full and roll into about 2" balls.
- Roll in sugar and place on ungreased cookie sheet. Flatten slightly with the bottom of a glass or the palm of your hand.
- Bake for 10-12 minutes or until cookies look set.
