Lunch Lady Frosted Brownies

  • Brownies:
  • 1 cup butter, melted (I used salted)
  • ½ cup cocoa (I used Nestle Toll House Cocoa)
  • 2 cups all-purpose flour
  • 2 cups sugar
  • 4 eggs
  • 4 teaspoons vanilla
  • 1 cup chopped nuts (optional)
  • Frosting:
  • ¼ cup butter, softened
  • ¼ cup milk or evaporated canned milk
  • ¼ cup cocoa
  • 3 cups powdered sugar
  • dash of salt (if you used unsalted butter)
  1. Preheat oven to 350 degrees. Grease a 9x13" baking pan.
  2. Melt butter in microwave (takes about 30 seconds) and pour into a mixing bowl, add cocoa and beat with an electric mixer until smooth.
  3. Add flour and sugar and beat together. Add eggs and vanilla (and nuts if your adding them). Mix until just combined. Be careful not to over mix!
  4. Pour into greased 9x13 baking pan. *Note* Batter will be thick. I had to use a rubber spatula to spread it into pan.
  5. Bake 25-30 minutes or until toothpick inserted in center comes out clean (Mine took 30 minutes, if you live in high altitude these should get done quicker more like 20-25 minutes).
  6. Wait only 10-15 minutes to frost brownies, you want to frost them while they are still warm so the brownies can absorb the frosting.
  7. To make the Frosting combine the ingredients in a mixing bowl and beat until smooth.
