Mini Swig Style Sugar Cookies

Ingredients
  • 1 cup (2 sticks) salted butter, softened
  • ¾ cup oil
  • 1¼ cup sugar
  • ¾ cup powdered sugar
  • 2 tablespoons water
  • 1 teaspoon vanilla
  • 2 eggs
  • ½ teaspoon baking soda
  • 5½ cups all purpose flour
  • -Frosting-
  • ½ cup (1 stick) salted butter, softened
  • ½ cup sour cream
  • 2 tablespoons milk
  • 1 teaspoon vanilla
  • 6 cups powdered sugar (maybe a little more)
Instructions
  1. Preheat oven to 350 F.
  2. Cream butter, oil, & sugars together (either by hand or with mixer)
  3. Add eggs, water, & vanilla & mix.
  4. Add flour & baking soda & mix well.
  5. Scoop cookie dough by the heaping ½ teaspoon full & roll into balls. Place on ungreased cookie sheet & flatten with the bottom of a glass dipped in sugar to ¼" thickness. Place 1" apart.
  6. Bake for 7-8 minutes or until the cookies are set & they are a pale golden color, be careful not to overcook them.
  7. Let cool & then prepare frosting.
  8. For Frosting: Combine all ingredients and using a mixer or a whisk & spoon mix ingredients together until you get a spreading consistency. You may need to add extra powdered sugar if the frosting is too thin. If it's too thick thin it out by adding more milk.
  9. Frost cookies when they are cool.
