Banana Bread Bundt Cake

  • For Dusting the Pan:
  • 2 tablespoons white sugar
  • ½ teaspoon ground cinnamon
  • For The Banana Bread:
  • 6 tablespoons butter, softened
  • 1-1/2 cups white sugar
  • 2 eggs
  • 3 ripe bananas, mashed
  • 1 cup sour cream
  • 1 teaspoon vanilla extract
  • ½ teaspoon ground cinnamon
  • 1-1/2 teaspoons baking soda
  • 2-1/4 cups all-purpose flour
  • ⅔ cup chocolate chips or walnuts (optional)
  • powdered sugar for sprinkling on top
  1. Preheat oven to 300 degrees
  2. Grease bundt pan. In a small bowl, mix together 2 tablespoons of sugar and ½ teaspoon cinnamon. Dust pan lightly with cinnamon and sugar mixture. It should stick easily with the sides greased.
  3. In a large bowl, mix butter and sugar together. Stir in eggs, mashed bananas, sour cream, vanilla and cinnamon. Mix in baking soda and flour. Stir in chips or nuts if you are adding them. Pour in to prepared pan.
  4. Bake for 50-60 mins or until a toothpick inserted in the center comes out clean. Let cool for 30 mins then turn out on cooling rack. Sprinkle with powdered sugar.
