  • 1 cup butter soft
  • 1 cup brown sugar, packed
  • 1 cup sugar
  • 2 eggs
  • 1 teaspoon vanilla
  • 2 ½ cups oats quick or regular (ground)
  • 2 cups flour
  • ¼ teaspoon salt
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 16 ounces chocolate chips
  • 1 4-ounce milk chocolate bar (grated)
  • 1 ½ cups chopped nuts (optional)
  1. Preheat oven to 375 degrees.
  2. Cream together, butter, sugars, vanilla and eggs, then set aside.
  3. Finely grind oatmeal in a blender or food processor. Add the flour, salt, baking powder and soda into the food processor/blender and give is a quick pulse to get everything combined. If your food processor is too small just combine in a bowl. Add dry ingredients to wet and beat just until combined. Grate chocolate bar using a cheese grater and add it, along with chocolate chips and nuts to the batter. Mix just to combine.
  4. Drop by heaping tablespoonfuls, 2 inches apart, on a greased cookie sheet. Bake for 10-12 minutes or until the edges are just starting to get a little brown, don't over bake.
