Quick French Baguettes
Recipe type: Bread
  • 2½ cups all purpose flour (or bread flour)
  • 1 Tablespoon sugar
  • 1½ teaspoon quick rise dry active yeast
  • 1 cup warm water
  • 1 teaspoon salt
  1. Place yeast, 1 cup warm water, flour, sugar, & salt into bread machine pan in that order. Select Dough cycle, and press Start. If not using a bread machine place the ingredients in your stand mixer fitted with a dough hook & knead for 10-15 min. Or mix by hand in a large mixing bowl add ingredients, stir, then knead with hands on a floured surface for about 10 min. Whatever method you prefer, you only need to knead the dough for about 10-15. I turn my bread machine off after 10-15 min & let dough rise for 30-40 min.
  2. If your not using a bread machine place dough in a greased bowl, turning to coat all sides. Cover, and let rise in a warm place for about 30 minutes, or until double in size.
  3. Punch down dough. Using a floured surface roll into a 16x12 inch rectangle. Cut dough in half, creating two 8x12 inch rectangles. Roll up each half of dough tightly, beginning at 12 inch side. Roll gently back and forth to taper end. Place a few inches apart on a greased cookie sheet. Make diagonal slashes across loaves every 2 inches. Let rise in a warm place for 30 to 40 minutes, or until doubled in size.
  4. Preheat oven to 375 degrees F (190 degrees C)
  5. Bake for 20 to 25 minutes in the preheated oven, or until golden brown.
