Oatmeal Cinnamon Raisin Cookies

  • 2 cups flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • 1 teaspoon cinnamon
  • ¼ teaspoon pumpkin pie spice
  • 1 cup soft butter
  • 1 cup sugar
  • 1 cup dark brown sugar packed
  • 2 eggs
  • 2 teaspoons vanilla
  • 3 cups oats- not quick oats
  • 1½ cups raisins
  • Topping:
  • 3 tablespoons sugar
  • 1 teaspoon cinnamon
  1. Preheat oven 350 degrees. Lightly grease cookie sheets.
  2. In medium bowl mix flour, baking powder, soda, salt and spices together. Set aside.
  3. In large bowl cream butter, sugars, eggs and vanilla together until fluffy. Slowly stir (by hand) the flour mixture into the sugar mixture, only mixing until flour is incorporated. Don't over mix. Stir in oats and raisins by hand. Scoop 2-3 tablespoons and place on greased cookie sheet. Take the 3 T sugar and 1 t of cinnamon and mix in small bowl. Sprinkle a pinch of the mixture on top of each cookies. Bake at 350 for 10-12 mins. or until the edges start to get golden. They will be chewy cookies if you don't over bake.
